Apple dessert! – News from the authors

The apple tree grows all over Turkey. The apple is a fragrant fruit, sweet or sour, with small seeds, shiny and hard skin. It has a high nutritional value. It contains sugar, proteins, mineral salts, vitamins B and C.



  • 250 g cold butter
  • 420 gr of flour
  • 50 g granulated sugar
  • 1 g of salt

For the Hazelnut Pasta;

  • 100 g of hazelnuts
  • 25 g granulated sugar
  • 15 g of butter

For the apple mortar;

  • 4 apples
  • 25 g granulated sugar
  • 10 g cinnamon powder

For the previous;

  • Egg yolk
  • granulated sugar

Preparation of: We get our cold butter that we cut into pieces for the rondo. We start the rondoma by adding flour, sugar and salt. Continue the rolling process until the butter is well crumbled. We take our dough in a suitable kneading bowl and collect it well with our hands without kneading too much. Cover the dough with cling film and put it in the fridge to rest for about 30 minutes. For the hazelnut paste, take the hazelnuts, sugar and butter in the round and pass it through the round. For the apple mortar, after peeling and cutting our apples, we bring them to our pan. Add the powdered sugar and mix. When the apples have released their juice, add the cinnamon and continue cooking for another 1-2 minutes. We take the rested dough in the refrigerator on the counter and divide it into 6 equal parts. We roll each piece by hand and then set it aside. We take two pieces of baking paper and put one of them on the counter and take one of the dough on baking paper and cover with baking paper again. We open the dough with a rolling pin so that there is a width. When our dough reaches the size we want, take the baking paper. We put our hazelnut paste in the middle of our dough, leaving a little space at the edges. Let’s put our apple mortar and fold the dough with baking paper from the edges towards the apple mortar. We put our desserts ready on a baking tray lined with baking paper. We do the same with our other meringues, respectively. After shaping all of our meringues, brush the edges with egg yolk and sprinkle with granulated sugar. We leave our desserts to cook for 30 minutes in the ventilated oven preheated to 170 °C.   • 1 egg
  • 70 g of powdered sugar
  • 130 g of corn starch
  • 5 g of vanilla
  • 10 g of baking powder
  • 30 g of yogurt
  • 200 g of flour

For the apple mortar;

  • 3 apples
  • 40 g granulated sugar
  • 40 g crushed walnuts
  • 10 g cinnamon powder

For the top;

Preparation of: First, let’s prepare our applesauce. Grate the apples and then put them in a Teflon pan, sprinkle sugar on top with a spoon and let them cook. When the water has been absorbed, add the cinnamon and walnuts, turn off the heat and let it cool. Let’s prepare our dough. Mix all the ingredients except the flour. Add the flour little by little to get a smooth dough. Let the dough rest for 5 minutes. Break off pieces the size of a tangerine and roll with a rolling pin in an oval shape. We make 4 or 5 notches with the help of a knife and put the inner mortar at the end and wrap it. We bend the ends slightly and put them on our greased baking tray. Bake in a ventilated oven preheated to 180 degrees. When it comes out of the oven, I sprinkle it with powdered sugar. Enjoy your meal.



For the dough;

  • 2 eggs
  • 250 g margarine (melted)
  • 70 g of milk
  • 100 g of sugar
  • 5 g of vanilla
  • 10 g of baking powder
  • 650 gr of flour

For inside;

  • 4 red apples
  • 8 spoons of sugar
  • 2 teaspoons of cinnamon
  • optionally new grinds

For the previous;

  • Powdered sugar
  • Egg yolk

Preparation of: Put the melted margarine, egg, milk, sugar, yeast and vanilla in the bowl where you will knead the apple pie dough and mix it lightly with the help of a spoon. Then add as much flour as needed and make a dough about the consistency of an earlobe. While the dough rests, prepare the filling. Peel and grate the apples. Take a saucepan and add sugar. Cook until the apples are juicy. When cooked, remove from heat and add cinnamon and mix. Grease the pan in which we will cook the cake with light oil. Reserve some of the dough for the top strips. Spread the dough in our container. Spread the applesauce over the dough. Make strips on top and brush with egg yolk. Bake the apple pie in a ventilated oven at 180 degrees. After baking the cake, sprinkle it with powdered sugar.
