MATERIALS NEEDED FOR BALIKESIR KAYMAKLISI
• 1 kg of flour
• 300 grams of Bizim oil
• 6 eggs
• 2 glasses of milk
• 1/2 teaspoon of salt
• 800 grams of cream
For the syrup:
• 7 glasses of granulated sugar
• 5 glasses of water
• 1-2 drops of lemon
HOW TO DO BALIKESIR KAYMAKLISI?
The middle of the flour is opened in the form of a pool, the Bizim Yağ is mixed by adding milk, egg and salt. After being kneaded for 5 minutes on a flat, floured surface, it is covered with a towel and left to rest for 30 minutes. Take pieces of dough the size of an egg and roll them out to a size of 40 cm, as thin as a baklava dough. Place each open phyllo on a greased tray and bake in a preheated oven at 180 degrees until golden. Divide the fried dough into two equal amounts. Place the first batch of phyllo on an oiled baking sheet with the golden side on top. Spread the cream well on top.
Place the remaining phyllo back into the cream, fried side up. Mix granulated sugar with water and boil it to dissolve. After boiling, add a few drops of lemon juice and mix. Let it sit at room temperature for 2 hours to pour the hot syrup over the phyllo dough and absorb it. After that, it’s time to cut and serve!
