For the sauce;

350 g diced beef

3 tablespoons of oil

1 medium onion

1 grain of garlic

1 capia red pepper

2 tomatoes

3 green peppers

1 tablespoon of tomato paste

1 teaspoon of salt

Half a teaspoon of black pepper

1 cup of hot water

For the aubergines;

5 eggplants

1 tablespoon of oil

half a teaspoon of salt

We start by roasting our aubergines to prepare the legendary flavor geleli kebab, for this we make holes in the aubergines with a knife. Put the aubergines back on the fire or in the oven until they are soft. After the eggplants are well roasted, we put the eggplants in the bag and close the bag in order to easily separate the roasted eggplants from their skin. Eggplants that sweat this way will easily separate from their skins. Peel the roasted aubergines and then cut them into cubes. Now we start making the meat fry for our geleli kebab. For this, we put our oil in a non-stick pan. When the oil is hot, add the meat cubes and fry with the lid of the pan closed until it releases and absorbs its water. When the diced meat has absorbed its water, add the chopped onion and garlic and fry.

Then add the chopped green and red capia peppers and fry them. Then add the tomato paste and diced tomatoes and mix. Finally, we add salt, pepper and hot water to our geleli kebab and mix it and let it cook by closing the lid of the pan. Now we move on to the last process of our geleli kebab. We take our roasted and diced aubergines to the baking tray or in my debt. Pour in salt and oil and mix it and distribute it at the bottom of our bowl. Then transfer the meat stir-fry to the aubergines. Let it cook for 20-25 minutes in the oven preheated to 200ºC. Here, our geleli kebab is ready. We serve hot.
