Reward yourself: Chia Pudding Key Lime Pie

This Key Lime Chia Pudding is easy to make and incredibly delicious! This no-bake recipe is vegan and gluten-free!

Want to treat yourself to something sweet and healthy? Then this wonderful recipe is for you! Key Lime Chia Pudding is a delicious way to enjoy a great lime-flavored pudding that will satisfy more than any other pudding recipe. How to do this is shown below.

MATERIALS

This recipe makes 4 cups of pudding. The size of the cup is 250 ml.

For Chia Pudding;

  • 4 tablespoons of chia seeds
  • 1 cup of almond milk
  • Zest of 3 Key Lime lemons
  • 2 tablespoons of maple syrup
  • A quarter of a teaspoon of vanilla extract

For the Key Lime lemon mousse part;

  • ½ cup raw cashews (soaked in hot water for 1 hour and drained)
  • 6 tablespoons of coconut milk
  • 2 tablespoons of maple syrup
  • 1/4 cup Key Lime juice (lime juice can also be used)
  • Zest of 2 lemons
  • Half a teaspoon of matcha (for color, optional)

MANUFACTURE

  1. To make the chia pudding, mix all the ingredients in a bowl. Beat until well combined (about 30 seconds).
  2. Refrigerate the pudding for 2 hours or overnight to thicken.
  3. For the Key Lime Mousse Layer, add all ingredients to a blender. Mix it in a blender until you get a smooth consistency. For smoothness in this step, stop the blender a few times and scrape the remaining parts.
  4. When both layers are ready, first pour the chia pudding into the bowl or glass you want to use. Then pour over the mousse you have prepared.
  5. Put in the fridge and leave to rest for 2 hours before serving.

NOTES

  • The chia pudding needs to wait at least 2 hours for it to absorb the liquids well and acquire a pudding-like texture.
  • If you can’t find Key Lime, you can use lime. The rind of one lime will suffice for the Key Lime rind used for both layers.
  • You can keep this recipe in the fridge for up to a week. However, don’t forget to cover it so it doesn’t dry out.
