For the dough:

  • 1 teaspoon of yogurt
  • 1 tea cup of oil
  • 1 teaspoon of water
  • 1 teaspoon of salt
  • Half a packet of baking powder
  • 2 eggs
  • 4 glasses of flour

For the cream:

  • 5 cups of milk
  • 2 egg yolks
  • 4 tablespoons of flour
  • 1 tablespoon cornstarch
  • 1 cup granulated sugar
  • zest of half a lemon

For the syrup:

  • 1.5 cups granulated sugar
  • 1.5 glasses of water
  • 1 teaspoon of lemon juice

To flour the counter:

  • 1 cup of cornstarch

To lubricate:

  • 1 teaspoon of melted butter
  • 1 tea cup of oil


  • First, get a large bowl. Mix the water and sugar until the sugar dissolves and bring to a boil. After boiling, add the lemon juice and simmer until it reaches the consistency of sorbet, turn off the heat and let it cool to room temperature.
  • To prepare the baklava dough, mix 1 cup yogurt, oil, water, salt, yeast, and egg in a large bowl.
  • Add the flour little by little to this mixture and knead until the dough takes on a non-sticky consistency.
  • Sprinkle starch on the counter to prevent the dough from sticking and divide the kneaded dough into 18 equal parts.
  • For the custard; In a separate bowl, mix 1 cup of milk, egg yolks, vanillin, starch, flour and lemon zest.
  • Pour the remaining 4 cups of milk into the saucepan. After adding 1 cup of granulated sugar, stir while the bottom of the stove is on, until the sugar dissolves.
  • Take a ladle of milk from the warmed milk mixture in the pot and slowly add it to the egg mixture you have prepared in the bowl, to even the heat.
  • Mix the mixtures at the same temperature. Add the mixture from the bowl to the pot little by little and let it cook, stirring constantly, until it takes the consistency of custard. Once cooked, take it off the heat and let it cool.
  • Dust the counter with starch again. Open all the meringues very thinly.
  • Place the phyllo dough on the greased, ovenproof baking sheet. Let the first sheet of dough rise.
  • Lubricate the first layer of dough with the help of a brush with a mixture of melted butter and oil.
  • Grease each part of the 17 layers and place them on the baking tray.
  • Pour the cream mixture you have prepared over the phyllo dough.
  • Gather the overflowing phyllo from the first layer by folding them inwards.
  • After adding the last layer of dough, oil the last layer and cut it into slices.
  • Bake in a preheated oven at 170 degrees for 30 minutes until golden.
  • Once the initial temperature of the laz pastry that you took out of the oven has passed, pour the cooled syrup over it and enjoy it with your loved ones.
